Cottage Cheese Dill Bread
Ingredients
2 c all-purpose flour
2 t baking powder
1/2 t baking soda
1 t garlic salt
1/2 t garlic powder
1/4 t cayenne pepper
1 c cottage cheese
2 eggs
6 T milk
1/4 c honey
4 T melted butter
3-4 T fresh dill
1/2 cut shredded cheese (suggest cheddar)
Directions

Preheat oven to 350 F.

Lightly grease a medium-sized loaf pan.

Mix all dry ingredients in a large mixing bowl.

In a separate bowl, combine cottage cheese, eggs, milk, honey, and melted butter and beat well.

Add the wet ingredients to the dry ingredients.

Add dill and shredded cheese.

Mix just until combined (will be fairly stiff).

Spread mixture evenly into loaf pan.

Baked for 40-50 minutes (until knife inserted come out clean).

Place on cooling rack (in pan) for 10 minutes.

Remove bread from pan and allow to cool on rack for another 30 minutes before slicing.
